Vegan Crunchy Granola Clusters!

These Vegan Crunchy Granola Clusters are the ultimate crunchy granola snack! The clusters get super crunchy and crispy, making the perfect topping for smoothie bowls or yogurt bowls. These granola clusters are also great to snack on by themselves, or you could try enjoying them in a bowl with your favourite nut milk.

These make a great healthy snack or breakfast because they include complete carbohydrates, protein, and healthy fats, making them macronutrient balanced and satisfying. These are also lightly sweetened with dates. I added the following ingredients for extra nutrition and benefits:

Slivered almonds – healthy fat and protein source, high in Vitamin E, copper, magnesium, manganese, and iron

Ground flax seeds – protein, healthy fat, and omega 3 sources, plus high in calcium and vitamin E

Sunflower seeds – healthy fat and protein source, high in selenium, phosphorus, and B vitamins

Coconut chips – healthy fats and mineral source

Ingredients

  • 1/3 cup dates
  • 2/3 cup water
  • 1 cup oats GF if necessary
  • 1/4 slivered almonds
  • 2 tablespoons ground flax
  • 1/2 teaspoon cinnamon
  • 1/4 cup sunflower seeds
  • 1/4 cup coconut chips or shredded coconut

Instructions

  • Preheat oven to 325 degrees Fahrenheit and line a baking sheet with parchment paper or a silicone baking mat.
  • Pour water over the dates to soak for 5 minutes while you prepare the dry ingredients.
  • Add the oats, slivered almonds, ground flax, cinnamon, and sunflower seeds to a large bowl. Stir to combine.
  • Blend the soaking dates with the water until completely smooth. Pour the smooth date paste over the dry ingredients and stir until fully coated.
  • Crumble the granola mixture over your prepared baking sheet. Bake in the preheated oven for 30-35 minutes, until golden brown and crunchy.
  • Let cool, then add the coconut chips.
  • Store in the fridge.
